Last week when I was sick I enjoyed watching Giada at Home and in this particular episode she made an entree, appetizer and one breakfast/dessert - risotto, smoked salmon with apples and capers and cinnamon twists. The original risotto recipe was made with lobster and I substituted it with scallops. Please find the recipe at foodnetwork.com.
I didn't take step by step pictures this time because I was on the phone with my dear friend on the east coast and had to multi-task. Here is the end result; the only thing I would change is the cook time on the rice because I ended up following the recipe and as a result overcooked it. Just use your judgement and cook the according to your preference (firm, soft, overcooked).
This is a great recipe for a first timer and can be prepared with different flavors so don't limit yourself to just this. My dad suggested putting dill or mushrooms and I'm sure there are many other flavors you can incorporate. Enjoy!
