This is one of my favorite recipes from Cooking Light, its easy and takes barely any time to prepare. The recipe below is not the exact recipe from the magazine...for one, they used pork and two I just cooked it from memory but it should be pretty close.
Ingredients:
1 chicken breast
2 chipotle peppers (from the can), finely diced
1 lime, zested and juiced
Salt to taste
1 tablespoon olive oil
2 large shallots sliced into thin rings
6 small (taco size) corn tortillas
Slice chicken breast into thin strips and put in medium sized bowl. Cut chipotles and add to bowl. Zest the whole lime over the bowl then cut lime in half and add the juice of the whole lime. Let sit for 15 minutes. While the chicken is marinating, slice shallots and in 10 minutes heat the olive oil on medium in a skillet. Saute shallots until tender then place in a serving bowl. Add chicken to skillet and saute until meat is cooked. While chicken is cooking warm tortillas on medium heat in a small skillet; only heat for 30-40 seconds on each side. You want the tortillas maliable not crisp. When chicken is cooked add to bowl of shallots and mix.
Serve tacos immediately. We added lowfat sour cream to our tacos just for a little flavor. Enjoy!
It is inspiring to know yummy can equal healthy. That taco looks yummy! Here is a challenge for you : Is it possible to make a healthy lumpia? I tried some lumpia at Lumpia Land on 1208 Pine Street and they were yummy but very oily. I don't know much about lumpia... can it be made without frying? The Lumpia Land guy is making a fortune (check out yelp) selling lumpia to mostly lumpia-ignorant (i.e. non-Fillipino) people. He has no competition on the street right now.
ReplyDeleteWell there are fresh lumpia which have a lot more vegetables in them and are not fried. They are similar to spring rolls but definitely not as delicious as lumpia Shanghai! Also, fresh lumpia doesn't hold up for long because once the sauce penetrates the wrapper they get really soggy.
ReplyDeleteI've heard of Lumpia Land, is it as good as people say? Btw, have you been to Baguette Box? If not, go! It's near Baltic Room. Oh and if you haven't been to Machiavelli go there too :)
I love Baguette Box! I will put Machiavelli on the TDL. I had 12 lumpia for $5 at LL and it was yummy but I was starving. I could have eaten 3 more dozen but I didn't think it was worth it or healthy. I don't think the owner is Fillipon so I don't know how authentic the lumpia are. The customers are mostly drunk clubbers.
